Long time no see! I hope you've been well. It has been a full year of moving and missing cooking and going out to fun new restaurants. But fear not, the recipe I am sharing today will (hopefully) bring you right back into bliss.

Now, everyone loves baked potatoes, but what about a casserole version? Follow these directions to cook the easiest and most delicious casserole yet!

Ingredients:

Russet Potatoes

Sour Cream

Bacon (optional)

Green Onions

Shredded Cheese

Salt & Pepper

Steps:

  1. Wash potatoes and slice lengthwise

  2. Repeat for each layer

    1. Place potatoes in casserole dish of your choice

    2. Layer with a thick coat of sour cream

    3. Sprinkle on bacon, cheese, green onions

  3. After 3-4 layers (depending on the depth of your dish), repeat this step for the top layer of the casserole with extra cheese for a nice golden-brown finish!

  4. Pre-heat the oven to 375 degrees and cook for 1 hour and 15 minutes.

  5. Serve and enjoy with extra sour cream, cheese, bacon, and green onions!

On the side, serve with steak your way and dig in.
