Chicken broth
Salt
Pepper
Oregano
Garlic
Olive Oil
Lime juice
Optional : avocado, cheese, tortilla chips, cilantro, sour cream, etc

I have ALWAYS been a sucker for soup and a strong advocate for the fact that it is one of the easiest, cheapest things to make for a meal. This chicken tortilla soup recipe has always been one of my favorites, especially considering it only has two steps.
Diverging from the original recipe, my favorite way to make this is to actually put it in the crock pot. Coming home after a long day to a pot of ready to eat soup is just *chef's kiss*. The recipe is essentially the same, except you put everything into the crock pot at once and are able to keep the chicken breast whole, shredding it once it is cooked all the way through.
Once the soup base is done, which takes little effort at all, the fun part is picking out your toppings. My go to is some sour cream, shredded cheese, avocado, tortilla chips, and a ton of cilantro. Jalapeño, extra lime slices, green onions, tomatoes, and even hot sauce would also be great! The best thing about this soup is that the base is very good and flavorful, but I have yet to find anyone who doesn't like it. The toppings really determine the flavor pallet and texture of the soup, making it a good option.
Cost wise, this soup is a staple in our college apartment since it is so cost effective to make. We try to keep extra chicken breast in the freezer and all of the other ingredients are on the cheaper side, with a lot of it being things that are kitchen staples that don't need to be repurchased often.
All in all, I rave about this soup constantly and its definitely worth a try! In my opinion, this is the perfect soup to try on a cold day and serve to a big group!
